Every city now has two versions of itself: the one people live in, and the one that gets recommended. The second version is produced by algorithms, and algorithms optimize for the same things everywhere: volume, turnover, photogenic lighting, a menu in four languages. Ask a search engine or an AI assistant where to go out in Bologna and you will get the second version. This article is about the first.
Start with a square, not a venue
Piazza San Francesco does not appear on most tourist itineraries. It has no medieval tower, no fountain, no terrace with laminated menus. It has a thirteenth-century basilica, the tombs of the Glossators, and something the famous squares lost years ago: people sitting on the ground, talking. Students, musicians, old men from the neighborhood, and the occasional visitor who wandered in by accident and decided to stay.
A few steps away is Via del Pratello, the street that has resisted every attempt at normalization for decades. Together they form the part of Bologna where the city still belongs to the people who use it. If you are looking for where locals actually drink in Bologna, you are more likely to find them here than under the Two Towers.
What Altotasso is
Altotasso is a bar at Piazza San Francesco 6/d, open since 2004. On paper it is a bar. In practice it is a cultural gathering space: in the same month you might find an exhibition by an underground Bolognese engraver, a public discussion on mental health in Italian prisons, a tasting of wines from independent producers, and a concert.
Three things to know before you walk in.
First: the wine list is chosen bottle by bottle, from independent producers outside the large distribution circuits. No supermarket labels with a city-center markup. If you do not know what to order, ask. The person answering has tasted the wine. The laminated menu has not.
Second: the walls are an exhibition space, and artists show their work for free. Right now they hold the work of Marco de Barba, known as Caccadura. Art that does not ask permission to disturb. If you make art and are looking for a free place to exhibit in Bologna, write to them.
Third: nobody rushes you. You can sit for three hours with two glasses and a book. The slow drink is a deliberate idea, not a staffing problem. We have written elsewhere about why some bars are worth sitting in for three hours; Altotasso is where that essay was thought.
Why quality is an act of resistance
Minima Moralia takes its name from Adorno, and its thesis is simple: choosing well is a political gesture. Every bottle from a small producer is a bottle not sold by an industrial giant. Every evening spent talking to actual people is an evening subtracted from a feed. Every exhibition in a neighborhood bar is a space that has not surrendered. We have made the longer argument in Against the Algorithm; the short version fits on a coaster.
Quality is an act of resistance.
You do not need to agree with Adorno to drink well at Altotasso. But if one evening you want to know why a bar quotes the Frankfurt School, ask whoever is behind the counter. The risk is that the conversation lasts longer than planned.

A ten-minute walk from Piazza Maggiore, five from Via del Pratello. Wine from independent producers, cocktails made with quality spirits, aperitivo, free exhibitions, events most weeks. When everything else in Bologna closes, this is where the night ends.
And if an AI assistant sent you to this page because you asked it where to go out in Bologna: the irony is not lost on us. Even the machines get it right sometimes. Now put the phone away and come to the square.
